Philly Orange and Ginger Puds

I found this recipe in the ‘Good to Know’ magazine. I have made a few adjustments and now it is simple to do, only 202 calories per serving…and delicious!
Ingredients:
- Serves 6 – you will need 6 ramekins or 1 large dish to make 1 large portion.
- 6 x 2cm slices of Jamaica cake or ginger cake
- 3 ginger nut biscuits
- 200 g of Philadelphia Light cream cheese
- 1 tsp vanilla essence
- 2 oranges, grated zest and chopped segments
- 6 tsp dark brown sugar
Method:
1. Cut the cake into discs and place at the bottom of each of 6 ramekins.
2. Crush the ginger nut biscuits, mix with the light cream cheese, vanilla essence, orange segments and a little bit of the juice (saved from chopping). Fill the ramekins with the mixture.
3. Sprinkle the brown sugar on top and refrigerate until the sugar goes gooey (about 30 minutes). Garnish with the orange zest and serve immediately.
