Peanut Chicken – in 15 Minutes!

 peanut chickenThis is an incredibly easy and delicious way to make chicken with a satay type of peanut sauce. It is all done in the microwave! Think your microwave is just for reheating? Think again! Yes, you can use it to cook raw chicken, at least in this dish. It really works! Time it!

 It is delicious served with rice and mixed vegetables. (I have been cheating and, although expensive, I am loving the flavoured pre-cooked rice pouches you can now buy in the grocery store – perfect rice, every time, no fuss and no muss.) My husband and I have been enjoying the frozen individual microwave vegetables in a steam bag – once again, no pots, no peeling and chopping and no waste.

Yes, the rice and frozen veg are more expensive, but I have worked these costs into my weekly shopping budget, and to be honest, for the amount of effort and energy it saves me, they are worth it.

 As well, I have discovered the garlic, ginger and lemongrass pastes you can buy in tubes in the veggie aisle at the grocery store. Perfect if you use these types of ingredients quite a bit. So easy!

 Alternatively, you could serve this dish over noodles.

Ingredients: (Serves 4)

  •  1 onion, finely chopped (or use frozen chopped onions)
  • 2 cloves of garlic, crushed (or try 2 tsp of garlic paste in a tube)
  • 1 tsp ginger paste (see above)
  • 1 tsp lemongrass paste (see above)
  • ¼ cup chunky peanut butter
  • ½ cup chicken stock (try the Knorr jelly stockpots – just use 1 and add ½ cup boiling water to dissolve) – alternatively, use a chicken bullion cube
  • ¼ cup of honey
  • 2 tsp Dijon mustard
  • 1 tbsp curry powder
  • Pinch of cardamom
  • Dash of Tabasco or other hot pepper sauce
  • 4 boneless, skinless chicken breasts (rinsed, patted dry, and cut into 1 ½ inch cubes)

Method:

  1. In a microwaveable dish (which holds around 5 cups), microwave the chicken uncovered on high power for 2 minutes.
  2. Stir in the ginger paste, lemongrass, peanut butter, chicken stock, honey, mustard, curry powder, cardamom and Tabasco. Add the chicken cubes. Microwave uncovered, on high power, for 6 minutes.
  3. Stir and microwave on high power until the chicken is cooked through – around another 6 minutes.
